This eccentric product is the joint effort of one of Berlin’s wastewater facilities and Xylem, a water technology company.
The tech to purify the wastewater involves an ozone-making machine that can break the waste down to the molecular level. There is another machine with a type of special carbon fiber that can remove 99.999% of chemicals and pollutants. The advanced process introduced by Xylem can purify water to the point that it is safe for human consumption.
The reason they choose to make beer with recycled water is that this beverage plays a vital part in German culture. The country has something called Reinheitsgebot, a set of strict rules on purity when it comes to beer making and Reuse Brew, their alcoholic drink made from purified wastewater, meets all the standards.
The application manager of Reuse Brew Jan-Karl Nielebock said that they had to go through lots of tests to be approved to launch the beer. The law asks for drinking water quality, and they have had to prove that several times.
Local universities and the German Federal Ministry of Health have run a lot of analysis on the product, and Reuse Brew has gained approval from all of them.
Several steps are involved in the making of beer, including cooking malted barley with water and boiling the mix with hops, which can further clean the water.
Berlin is not the only place you can find beer made from recycled water. Just last month, four other breweries based in Louisville, Kentucky collaborated with a local water plant to do the same. Xylem and several other breweries are in Pure Water Brewing Alliance, a project that promotes more sustainable beer from purified wastewater.
